Cartamusica carasau
Pane Carasau is a traditional Sardinian flatbread known for its thin, crispy texture and long shelf life. Originally created by shepherds, it was designed to last for extended periods during long stays away from home.
Made from simple ingredients such as wheat flour, water, yeast, and salt, the dough is rolled into very thin sheets and baked at high temperatures. During baking, it puffs up like a balloon, then is split into two layers and baked again to achieve its characteristic crispness.
Also called “carta da musica” (music paper) due to its thinness and crunch, pane carasau is typically served as a table bread, snack, or base for traditional dishes such as pane frattau.
